Soft, squishy donuts made better for you. In this recipe we use our Birthday Cake pancake mix, and we also bake the donuts instead of frying them! Vegan friendly and utterly delicious.

 

INGREDIENTS

  • 180g of Griddle Birthday Cake Mix
  • 200ml soy milk mixed with 1tsp apple cider vinegar
  • 40g melted vegan butter or coconut oil
  • 80g apple sauce
  • Toppings! We went for classic icing and sprinkes
  • Equipment: Donut pan! We use this one

METHOD

  • In a mixing bowl combine the wet ingredients (milk, cider vinegar, apple sauce and melted butter)
  • Gradually stir in the pancake mix and whisk until you have a smooth batter
  • Carefully pour into your donut pan and pop into the oven on 180C fan for 20 minutes.
  • Take out of the oven and leave for 10 minutes to cool.  
  • Whilst cooling, prepare your toppings! We went for icing sugar and sprinkles, but for a protein hit why not try topping with Greek yoghurt or nut butter!
